1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)

1/4 cup balsamic vinegar

2 tablespoons honey

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Toothpicks, for serving

Marinate the Chicken: In a medium bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, thyme, salt, and pepper. Add the chicken pieces to the marinade, making sure they are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Berries: While the chicken is marinating, rinse the mixed berries gently under cold water. If using strawberries, slice them into halves or quarters, depending on their size. Set aside.

      Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken pieces in a single layer (discard the leftover marinade). Sauté the chicken for about 6-8 minutes, turning occasionally, until cooked through and golden brown on the outside. A meat thermometer should read 165°F (74°C).

        Add the Berries: Once the chicken is cooked, gently add the mixed berries to the skillet. Stir gently to combine and heat the berries until they are slightly softened, about 2-3 minutes.
