Ingredients

1 cup rolled oats

1 cup mashed ripe bananas (about 2 large bananas)

1/3 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted (or vegetable oil)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips or raisins (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, baking powder, baking soda, cinnamon, and salt. Stir well to evenly combine.

Prepare Wet Ingredients: In a separate bowl, mix together the mashed bananas, honey (or maple syrup), applesauce, melted coconut oil, eggs, and vanilla extract until smooth and well incorporated.

Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients and mix until just combined. Avoid overmixing, as this can lead to dense muffins.

Add Extras: If desired, fold in the nuts and chocolate chips or raisins for added texture and flavor.

Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each compartment about two-thirds full.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely. Enjoy warm or at room temperature!
