1 box (12 oz) vanilla wafers

1/2 cup granulated sugar

1/3 cup all-purpose flour

1/4 teaspoon salt

2 3/4 cups whole milk

3 large egg yolks

1 teaspoon pure vanilla extract

1 tablespoon unsalted butter

Whipped cream (for topping)

Extra banana slices and vanilla wafers (for garnish)

Instructions
 

Prepare the Pudding Base:

    - In a medium saucepan, whisk together the sugar, flour, and salt over medium heat. Gradually add in the whole milk while continuously whisking to prevent lumps from forming.

      Cook the Mixture:

        - Cook the mixture over medium heat, stirring constantly until it thickens and begins to bubble (about 10 minutes). This is important to develop a smooth texture.

          Temper the Egg Yolks:

            - In a small bowl, lightly beat the egg yolks. Once the milk mixture is thickened, scoop out about 1 cup of the hot mixture and whisk it into the egg yolks to temper them. This helps prevent the yolks from curdling when added back to the mixture.

              Combine Components:

                - Slowly whisk the egg yolk mixture back into the saucepan with the cooked pudding. Cook for an additional 2-3 minutes until it thickens slightly more. Remove from heat and stir in the vanilla extract and butter until melted and incorporated.

                  Assemble the Pudding:

                    - In a 2-quart dish, layer a third of the vanilla wafers at the bottom. Top with half of the banana slices, followed by half of the pudding mixture. Repeat the layers: vanilla wafers, remaining bananas, and the rest of the pudding.

                      Chill:

                        - Cover the pudding with plastic wrap (making sure it touches the surface to avoid a skin forming). Refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the pudding to set.

                          Serve:

                            - Before serving, top with a generous layer of whipped cream. Garnish with extra banana slices and crushed vanilla wafers for added texture and decoration.
