The first step in creating delectable Banana Pumpkin Delight Muffins is to combine the dry ingredients properly. This seemingly simple task is crucial for achieving a well-balanced flavor and a uniform texture. When mixing your flour, baking powder, baking soda, cinnamon, nutmeg, and salt, it's important to whisk these ingredients together thoroughly. Doing so prevents lumps and ensures that the leavening agents are evenly distributed throughout the mixture. This step is particularly significant because uneven distribution can lead to some muffins rising too much while others remain flat, resulting in an inconsistent baking outcome.

Ingredients

1 cup ripe bananas (about 2 medium bananas), mashed

1 cup canned pumpkin puree

1/2 cup vegetable oil (or melted coconut oil)

1/2 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups with cooking spray.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until smooth and well combined.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt until evenly mixed.

Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Do not overmix. If using, fold in the chopped nuts or chocolate chips.

Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove from the oven and let the muffins cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Serve: Enjoy these delicious banana pumpkin muffins for breakfast, snack time, or as a delightful dessert!
