1 pound cooked brisket, thinly sliced

1 cup BBQ sauce

1 large onion, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

4 slices sharp cheddar cheese

4 crusty sandwich rolls or ciabatta loaves

Freshly cracked black pepper, to taste

Pickled jalapeños (optional, for an extra kick)

Fresh parsley or cilantro, for garnish

Instructions
 

Prepare the onions: In a medium skillet, heat the olive oil over medium heat. Add the thinly sliced onion and sauté until soft and caramelized, about 10-12 minutes. Stir in the garlic powder and smoked paprika, and cook for an additional 2 minutes. Remove from heat and set aside.

    Combine brisket and BBQ sauce: In a separate saucepan, heat the sliced brisket and BBQ sauce over medium heat, stirring until the brisket is evenly coated and heated through. This should take about 5 minutes.

      Assemble the melts: Preheat your oven broiler. Slice the sandwich rolls in half and lay them open on a baking sheet. Layer the bottom half of each roll with the heated brisket mixture, followed by the caramelized onions. Place a slice of sharp cheddar cheese on top of each.

        Broil until bubbly: Place the baking sheet under the broiler for about 2-3 minutes, or until the cheese is melted and bubbling. Keep a close eye on them to prevent burning.
