2 large sweet potatoes, cubed

1 lb chicken breast, cut into bite-sized pieces

1 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, sliced

½ cup red onion, thinly sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare Sweet Potatoes:

    Preheat your oven to 425°F (220°C). In a bowl, toss the cubed sweet potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread them in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes, or until tender and slightly crispy, stirring halfway through.

      Cook the Chicken:

        While the sweet potatoes are roasting, heat a skillet over medium heat. Add the chicken pieces and season with a bit of salt and pepper. Sauté for about 5 minutes, or until they are browned on the outside and cooked through. Pour in the BBQ sauce and cook for an additional 5 minutes, allowing the chicken to absorb the flavors.

          Prepare the Vegetables:
