1/2 cup diced yellow onion

2 cloves garlic, minced

1 small red bell pepper, finely chopped

1 tablespoon soy sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1/2 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional for heat)

1/4 cup chopped green onions (scallions)

For the Peach Glaze:

1 cup ripe peaches, pureed (about 2 medium peaches)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Salt to taste

For Assembly:

1 head of butter or bib lettuce, leaves separated and washed

Shredded carrots, for garnish

Chopped fresh cilantro or mint, for garnish

Sliced cucumbers, for a refreshing crunch (optional)

Instructions

Prepare the Peach Glaze:

    - In a small saucepan, bring the peach puree, honey (or maple syrup), rice vinegar, and grated ginger to a simmer over medium heat.

      - Stir occasionally and allow it to simmer for about 5 minutes.

        - Add the cornstarch slurry and stir until the mixture thickens, then remove from heat and season with salt to taste. Let it cool slightly.

          Cook the Beef Mixture:

            - In a large skillet over medium heat, add the ground beef and cook until browned, breaking it up with a spatula as it cooks (about 5-7 minutes).

              - Drain excess fat if necessary, then add diced onion and minced garlic, cooking until the onion becomes translucent (about 3 minutes).

                - Stir in the red bell pepper, soy sauce, hoisin sauce, sesame oil, black pepper, and red pepper flakes (if using). Cook for an additional 2-3 minutes until everything is well combined and heated through.

                  - Remove from heat and mix in chopped green onions.

                    Assemble the Wraps:

                      - On each lettuce leaf, add a generous spoonful of the beef mixture.

                        - Drizzle with the peach glaze and top with shredded carrots and fresh herbs (cilantro or mint).

                          - If desired, add slices of cucumber for extra crunch.

                            Serve:

                              - Serve immediately while the beef is warm and the lettuce is crisp. Enjoy each wrap by folding the lettuce around the filling and savoring the delightful flavors.
