Beef & Mushroom Country Casserole

1 lb ground beef

8 oz mushrooms, sliced

1 medium onion, chopped

2 cloves garlic, minced

1 cup beef broth

1 can (10.5 oz) cream of mushroom soup

2 cups frozen mixed vegetables (peas, carrots, corn)

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

4 cups cooked egg noodles

1 ½ cups shredded cheddar cheese

¼ cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease and set aside.

      In the same skillet, add the sliced mushrooms, chopped onion, and minced garlic. Sauté until the onions are translucent and the mushrooms are tender, about 5-7 minutes.

        Stir in the cooked ground beef, beef broth, cream of mushroom soup, frozen mixed vegetables, Worcestershire sauce, dried thyme, paprika, salt, and pepper. Mix until everything is well combined.

          In a large mixing bowl, combine the sautéed mixture with the cooked egg noodles. Stir until the noodles are coated evenly with the beef and vegetable mixture.

            Pour the entire mixture into a greased 9x13 inch baking dish. Spread the mixture evenly and top with shredded cheddar cheese.

              Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.

                Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
