Ingredients

1 cup mixed berries (strawberries, blueberries, raspberries)

1 cup heavy whipping cream

8 oz mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup graham cracker crumbs

Zest of 1 lemon (optional)

Fresh mint leaves for garnish

Instructions

Prepare the Berries: Rinse the mixed berries thoroughly. Slice the larger strawberries into halves or quarters. Set the berries aside in a small bowl and sprinkle a teaspoon of powdered sugar over them to macerate for about 15 minutes, allowing their natural juices to release.

Make the Mascarpone Cream: In a large mixing bowl, combine the mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture on medium speed until stiff peaks form, creating a light and fluffy mascarpone cream.

      Layer the Trifle Cups:

        - Begin with a layer of graham cracker crumbs at the bottom of each serving cup (about one tablespoon).

          - Spoon a layer of the mascarpone cream over the crumbs until they are just covered.

            - Add a generous layer of the macerated berries on top of the mascarpone.

              - Repeat the layering process until the cups are filled, finishing with a dollop of mascarpone cream at the top.

Garnish and Chill: If desired, sprinkle the lemon zest over the top for a refreshing zing. Add a few whole berries and mint leaves for garnish. Cover the trifle cups and refrigerate for at least 2 hours to allow the flavors to meld.

Serve: Serve the trifle cups chilled, and enjoy the delightful combination of creamy mascarpone, luscious berries, and crunchy graham crackers.
