1 medium head of cauliflower, chopped into florets

1 large onion, diced

4 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups sharp cheddar cheese, grated

1 cup heavy cream or half-and-half

2 tablespoons olive oil

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

Fresh chives, chopped (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes until they are translucent. Add the minced garlic and continue to cook for another 1-2 minutes until fragrant.
