Biscoff Cookie Butter Brownies

1 cup unsalted butter (2 sticks)

1 cup granulated sugar

1 cup brown sugar, packed

4 large eggs

2 teaspoons vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon salt

1 cup Biscoff cookie butter (plus extra for drizzling)

1 cup Biscoff cookies, crushed (for topping)

Optional: 1/2 cup chocolate chips

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a 9x13 inch baking pan with parchment paper.

    Melt the Butter: In a medium saucepan, melt the butter over medium heat. Once melted, remove from heat and let cool slightly.

      Mix Sugars: In a large mixing bowl, combine the granulated sugar and brown sugar with the melted butter. Stir until combined and smooth.

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

          Combine Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, and salt until well mixed.

            Incorporate into Wet Mixture: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

              Add Biscoff Cookie Butter: Fold in the 1 cup of Biscoff cookie butter until fully incorporated. If using, you can also add the chocolate chips at this point.

                Pour into Pan: Pour the brownie batter into the prepared baking pan, spreading it evenly.

                  Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

                    Cool and Drizzle: Remove from the oven and let the brownies cool in the pan for about 15 minutes. Then, drizzle with extra Biscoff cookie butter (you can heat it slightly in the microwave for a smooth drizzle) and top with crushed Biscoff cookies.
