Ingredients

1 can (15 oz) black beans, rinsed and drained

1 cup sweet corn (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

Salt and pepper to taste

12-14 small tortilla cups (store-bought or homemade)

Avocado slices for garnish

Crumbled feta or queso fresco (optional)

Instructions

Prepare the Salsa Mixture: In a large mixing bowl, combine the black beans, sweet corn, diced red bell pepper, chopped red onion, minced jalapeño, and cilantro.

Season: Pour the lime juice over the mixture, add the ground cumin, and season with salt and pepper. Mix well until all the ingredients are evenly coated.

Chill: Cover the bowl with plastic wrap and let the salsa sit in the refrigerator for at least 30 minutes. This allows the flavors to meld together beautifully.

Prep the Cups: While the salsa chills, if you are making homemade tortilla cups, preheat your oven to 375°F (190°C). Brush small flour or corn tortillas with a little oil, press them into muffin tins, and bake for 10-12 minutes or until golden and crisp.

Assemble: Once the salsa has chilled, spoon it generously into each tortilla cup. Top with slices of avocado and sprinkle crumbled feta or queso fresco for an added creamy touch if desired.

Serve: Arrange the salsa cups on a serving platter and enjoy as a refreshing appetizer or a party snack!
