1 can (15 oz) black beans, rinsed and drained

1 large ripe mango, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 cup corn kernels (fresh or frozen)

1 avocado, sliced

8 small corn or flour tortillas

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

For the Mango Salsa:

1 cup diced mango

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1 tablespoon fresh lime juice

Salt and pepper, to taste

Instructions
 

Prepare the Mango Salsa:

    - In a medium bowl, combine the diced mango, cherry tomatoes, red onion, jalapeño (if using), and lime juice.

      - Season with salt and pepper to taste, toss gently, and set aside.

        Cook the Black Bean Filling:

          - In a large skillet over medium heat, add olive oil.

            - Once the oil is hot, add the chopped red onion and diced red bell pepper. Sauté for 3-4 minutes until the onions are translucent.

              - Stir in the black beans and corn, followed by the cumin and chili powder. Season with salt and pepper.

                - Cook for an additional 5 minutes, allowing the flavors to meld together. Remove from heat.

                  Warm the Tortillas:

                    - In a separate pan or directly over an open flame, warm the tortillas for about 30 seconds on each side until they are soft and pliable.

                      Assemble the Tacos:

                        - Lay a warm tortilla on a plate and spoon a generous amount of the black bean filling into the center.

                          - Top with diced mango, sliced avocado, and a spoonful of the fresh mango salsa.
