Ingredients
  

For the Cupcakes:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1/8 teaspoon salt

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup granulated sugar

2 large eggs

Zest of 1 lime

Juice of 1 lime

1 teaspoon vanilla extract

For the Blackberry Topping:

1 cup fresh blackberries (plus extra for garnish)

1/4 cup granulated sugar

2 tablespoons lime juice

1 tablespoon cornstarch

1 tablespoon water

Instructions
 

Preheat the Oven:

    Preheat your oven to 325°F (160°C). Line a muffin tin with cupcake liners.

      Make the Crust:

        In a mixing bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, melted butter, and salt. Stir until well combined.

          - Spoon about 1 tablespoon of the mixture into each cupcake liner and press down firmly to form an even layer.

            Prepare the Cheesecake Batter:

              In a large mixing bowl, beat together the softened cream cheese and 1/2 cup sugar until smooth.

                - Add in the sour cream, eggs, lime zest, lime juice, and vanilla extract. Beat until fully incorporated and creamy.

                  Fill the Cupcakes:

                    Pour the cheesecake batter over the prepared crusts, filling each liner about 3/4 full. Bake in the preheated oven for 20-25 minutes or until the centers are set but slightly jiggly.

                      Cool the Cupcakes:

                        Once baked, remove the cupcakes from the oven and let them cool in the muffin tin for about 10 minutes. Then transfer them to a wire rack to cool completely.

                          Prepare the Blackberry Topping:

                            In a small saucepan over medium heat, combine the blackberries, 1/4 cup sugar, lime juice, cornstarch, and water. Stir gently and cook until the mixture begins to thicken and bubble, about 5-7 minutes. Remove from the heat and let cool.

                              Assemble the Cupcakes:

                                Once cooled, spoon a generous amount of the blackberry topping over each cheesecake cupcake. Garnish with extra blackberries and lime zest if desired.

                                  Chill and Serve:
