Ingredients

2 cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 large eggs

2 cups buttermilk

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

2 cups fresh or frozen blueberries

Maple syrup, for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with non-stick spray or butter.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Prepare Wet Ingredients: In a separate bowl, whisk the eggs, buttermilk, melted butter, and vanilla extract until smooth and fully combined.

Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix. The batter should be slightly lumpy.

Add Blueberries: Gently fold in the blueberries, allowing them to disperse evenly throughout the batter.

Pour into Baking Dish: Pour the pancake batter into the prepared baking dish and spread it out evenly.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean.

Cool and Serve: Remove the casserole from the oven and let it cool for a few minutes. Cut into squares and serve warm with maple syrup drizzled over the top.
