For the crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, softened

1/4 teaspoon salt

For the lemon filling:

4 large eggs

1 ¼ cups granulated sugar

1/4 cup all-purpose flour

1/2 teaspoon baking powder

Zest of 2 medium lemons

1/2 cup fresh lemon juice (about 2-3 lemons)

1 cup fresh blueberries (or frozen, thawed)

For the topping (optional):

Extra powdered sugar for dusting

Fresh blueberries for garnish

Instructions
 

Prepare the crust:

    - Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

      - In a mixing bowl, combine 1 ½ cups flour, ½ cup powdered sugar, softened butter, and 1/4 teaspoon salt. Mix until the dough resembles wet sand.

        - Press the dough evenly into the bottom of the prepared pan. Bake for 15 minutes or until lightly golden. Remove from the oven and set aside to cool.

          Make the lemon filling:

            - In a large mixing bowl, whisk together the eggs and granulated sugar until well combined and slightly frothy.

              - Integrate 1/4 cup flour and baking powder into the egg mixture, whisking until smooth. Add the lemon zest and lemon juice, stirring until fully combined.

                - Gently fold in the fresh blueberries, ensuring they are evenly distributed without breaking.

                  Combine and bake:

                    - Pour the lemon filling over the baked crust, spreading it evenly.

                      - Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly firm to the touch. It should spring back when lightly pressed.

                        Cool and serve:

                          - Once done, remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack.

                            - Once cool, refrigerate for at least 2 hours before cutting into squares for cleaner edges.

                              - Before serving, dust the top with powdered sugar and garnish with fresh blueberries if desired.
