1 cup rolled oats

1 ½ cups milk (or dairy-free alternative)

1 teaspoon vanilla extract

1 tablespoon maple syrup (or honey)

Zest of 1 lemon

1 tablespoon lemon juice

1 cup fresh or frozen blueberries

1 teaspoon cinnamon

½ teaspoon salt

1 cup whole wheat flour (or gluten-free alternative)

½ teaspoon baking powder

¼ cup unsalted butter, melted (or coconut oil for dairy-free)

A sprinkle of powdered sugar for garnish (optional)

Instructions
 

Prepare the Oat Filling: In a medium saucepan, combine the rolled oats, milk, vanilla extract, maple syrup, lemon zest, lemon juice, blueberries, cinnamon, and salt. Cook over medium heat while stirring occasionally until the mixture is thick and creamy (about 5-7 minutes). Once done, remove from heat and let cool slightly.

    Make the Dough: In a large bowl, whisk together the whole wheat flour and baking powder. Create a well in the center and add the melted butter. Gradually mix in the oat mixture, stirring until a soft dough forms. If the dough is too sticky, add a little more flour until manageable.

      Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

        Form the Pockets: On a lightly floured surface, divide the dough into 8 equal portions. Roll each portion into a circle about 4-5 inches in diameter. Place a generous spoonful of the cooled blueberry filling in the center of each circle.

          Seal the Pockets: Fold the dough over the filling to create a half-moon shape. Crimp the edges with a fork to seal securely, ensuring no filling escapes while baking.

            Bake: Place each pocket on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, until golden brown on the edges.
