Blueberry Lemon Scones

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon baking soda

1/4 cup unsalted butter, cold and cubed

Zest of 1 lemon

1 cup fresh blueberries (or frozen, if out of season)

1/2 cup buttermilk

1 large egg

1 teaspoon vanilla extract

1 tablespoon lemon juice

For the glaze:

1 cup powdered sugar

2-3 tablespoons lemon juice (adjust for consistency)

Zest of 1 lemon (optional, for garnish)

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and baking soda.

      Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

        Stir in the lemon zest and blueberries gently, being careful not to mash the berries.

          In a separate bowl, whisk together the buttermilk, egg, vanilla extract, and lemon juice until combined.

            Pour the wet mixture into the dry ingredients and stir until just combined. The dough will be slightly sticky; do not overmix.

              Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1 inch thick. Cut the dough into triangular scone shapes.

                Transfer the scones to the prepared baking sheet, spacing them a couple of inches apart.

                  Bake for 15-20 minutes or until the scones are lightly golden on top and a toothpick inserted comes out clean.

                    While the scones are baking, prepare the glaze by whisking together the powdered sugar and lemon juice in a small bowl. Adjust the consistency by adding more lemon juice or powdered sugar if needed.

                      Once the scones are out of the oven, allow them to cool for a few minutes. Drizzle the glaze over the warm scones and sprinkle with additional lemon zest if desired.
