1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) diced tomatoes (with juice)

1 medium onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

4 large eggs

1 avocado, diced (for topping)

Fresh cilantro or parsley, chopped (for garnish)

Grated cheese (optional, for topping)

Instructions
 

Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add onions and bell peppers. Sauté for about 5 minutes until softened. Stir in minced garlic and cook for an additional minute until fragrant.

    Add Spices: Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well to coat the vegetables with the spices.

      Mix in the Beans and Tomatoes: Add the black beans, kidney beans, and diced tomatoes (with their juices) to the skillet. Stir well to combine all ingredients and let everything simmer for about 10 minutes, allowing the flavors to meld together.

        Cook the Eggs: In a separate pan, cook the eggs to your liking (sunny side up, over easy, or scrambled). If you prefer, you can also create small wells in the chili and crack the eggs directly into the skillet. Cover and cook until eggs are set to your liking.
