4 slices of sourdough bread

4 slices of sharp cheddar cheese

2 large eggs

4 strips of cooked bacon or tempeh bacon (for a vegetarian option)

1 ripe avocado, sliced

2 tablespoons of unsalted butter

Salt and pepper to taste

Fresh chives, chopped (for garnish, optional)

Instructions
 

Prepare the Eggs: In a skillet, cook the eggs sunny-side up or as preferred, seasoning with salt and pepper. Cook until whites are set but yolks are still runny. Transfer the eggs onto a plate and cover to keep warm.

    Assemble the Sandwiches: Lay out two slices of sourdough bread on a clean surface. On each slice, place a slice of cheddar cheese. Layer the bacon (or tempeh bacon), avocado slices, and finally, the cooked eggs on top of the cheese. Finish with another slice of cheddar cheese on top, and close each sandwich with the remaining slices of sourdough bread.

      Grill the Sandwiches: In the same skillet, melt 1 tablespoon of butter over medium heat. Place one sandwich in the skillet carefully, and cook for about 4-5 minutes per side or until the bread is golden brown and the cheese is melted. Repeat with the second sandwich, adding the remaining butter before cooking.

        Serve: Remove the sandwiches from the skillet and let them rest for a minute. Cut each sandwich in half diagonally and sprinkle with freshly chopped chives (if using). Serve immediately for the ultimate breakfast treat!
