Breakfast Nachos with Hatch Chili

8 ounces of baked tortilla chips

1 cup of shredded sharp cheddar cheese

1 cup of shredded Monterey Jack cheese

1 can (4 ounces) of diced Hatch green chiles, drained

4 large eggs

1 tablespoon olive oil

1/2 cup black beans, drained and rinsed

1/2 avocado, diced

1/4 cup sour cream

1/4 cup fresh cilantro, chopped

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Hot sauce (optional, for serving)

Instructions
 

Preheat your oven: Set your oven to 400°F (200°C).

    Prepare the chips: Spread the baked tortilla chips evenly on a large oven-safe platter or a baking sheet lined with parchment paper.

      Add cheeses and chiles: Sprinkle the shredded cheddar and Monterey Jack cheeses over the chips, followed by the diced Hatch chiles and black beans.

        Bake: Place the nachos in the preheated oven and bake for about 10 minutes, or until the cheese is melted and bubbly.
