Broccoli Cheddar Quinoa Casserole

1 cup quinoa, rinsed and drained

2 cups vegetable broth

2 cups fresh broccoli florets

1 cup sharp cheddar cheese, shredded

1 cup milk (or dairy-free alternative)

1/2 cup Greek yogurt (or non-dairy yogurt)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (panko works great)

2 tablespoons olive oil

1/4 cup parmesan cheese, grated (optional for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a 9x13 inch casserole dish by lightly greasing it.

    Prepare the Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and let simmer for about 15 minutes, or until the quinoa has absorbed all the liquid. Fluff with a fork and set aside.

      Cook the Broccoli: While the quinoa is cooking, bring a small pot of salted water to a boil. Blanch the broccoli florets for 3-4 minutes until bright green and tender but still crisp. Drain and immediately plunge them into a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

        Sauté the Aromatics: In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.

          Make the Cheese Sauce: In a large mixing bowl, combine the cooked quinoa, sautéed onions and garlic, blanched broccoli, milk, Greek yogurt, Dijon mustard, smoked paprika, half of the shredded cheddar cheese, salt, and pepper. Mix until everything is well combined.

            Assemble the Casserole: Pour the quinoa and broccoli mixture into the greased casserole dish. Spread evenly, and top with the remaining shredded cheddar cheese and breadcrumbs. If using, sprinkle the parmesan cheese on top as well.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes until the cheese is melted, bubbly, and the breadcrumbs are golden brown.
