Buffalo Chicken Stuffed Spaghetti Squash

Ingredients
  

1 medium spaghetti squash

2 cups shredded cooked chicken (rotisserie works great)

1/2 cup buffalo wing sauce (adjust to taste)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup blue cheese crumbles (optional)

1/4 cup green onions, sliced

Salt and pepper to taste

Olive oil for drizzling

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Spaghetti Squash:

    - Preheat your oven to 400°F (200°C).

      - Carefully cut the spaghetti squash in half lengthwise. Scoop out the seeds and stringy fibers using a spoon.

        - Drizzle the inside of each half with olive oil and season with salt and pepper.

          - Place the squash halves cut side down on a baking sheet lined with parchment paper. Bake for 30-40 minutes, or until the flesh is tender and can be easily shredded with a fork.

            Make the Buffalo Chicken Filling:

              - In a large bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, and half of the cheddar cheese. Mix well until everything is evenly coated. If you’re using blue cheese, fold it in at this stage. Adjust the spice level by adding more or less buffalo sauce.

                - Season the mixture with salt and pepper to taste, and fold in the sliced green onions.

                  Combine & Bake:

                    - Once the spaghetti squash is done, remove it from the oven and let it cool for a few minutes until it's manageable.

                      - Using a fork, shred the spaghetti squash flesh to form strands. Gently mix the flesh with the buffalo chicken filling until combined.

                        - Spoon the filling back into the empty squash halves, and then top with the remaining cheddar cheese.

                          Final Bake:

                            - Return the stuffed spaghetti squash to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                              Serve:

                                - Once out of the oven, let it rest for a few minutes. Garnish with fresh parsley, additional green onions, or more buffalo sauce if desired. Serve warm and enjoy!
