Buffalo Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1/3 cup hot sauce (such as Frank's RedHot)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large whole wheat tortillas or wraps

1 cup shredded lettuce

1 cup diced tomatoes

1 avocado, sliced

1/2 cup blue cheese or vegan alternative, crumbled (optional)

1/4 cup ranch dressing or vegan ranch (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: In a medium bowl, mash the chickpeas with a fork or potato masher leaving some chunks for texture.

      Season the Chickpeas: Add the olive oil, hot sauce, garlic powder, smoked paprika, salt, and pepper to the mashed chickpeas. Mix until well combined and ensure the chickpeas are fully coated in the seasoning.

        Bake the Chickpeas: Spread the seasoned chickpeas onto a baking sheet lined with parchment paper. Bake for 20-25 minutes, stirring halfway through, until they are golden and slightly crispy.

          Warm the Tortillas: While the chickpeas are baking, warm the tortillas on a skillet for about 1-2 minutes on each side or until flexible and warm. Alternatively, you can wrap them in a damp paper towel and microwave for 30 seconds.

            Assemble the Wraps: Once the chickpeas are done, take a tortilla and lay it flat on a plate. Begin with a layer of shredded lettuce, followed by diced tomatoes, avocado slices, and a generous spoonful of the baked buffalo chickpeas.

              Add Cheese and Dressing: If using blue cheese, sprinkle it on top. Drizzle ranch dressing over the filling if desired.

                Wrap it Up: Fold in the sides of the tortilla and then roll it from the bottom up to create a tight wrap. Repeat the process for the remaining tortillas.

                  Serve: Cut the wraps in half diagonally and garnish with fresh cilantro or parsley if desired. Serve immediately with extra hot sauce or ranch on the side.
