Buffalo Mozzarella-Stuffed Chicken Patties

1 lb ground chicken

1 cup buffalo mozzarella, drained and chopped

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh parsley

2 cloves garlic, minced

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1/4 cup buffalo sauce (plus extra for serving)

1 egg, beaten

Prepare the Chicken Mixture: In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, onion powder, smoked paprika, salt, and pepper. Mix until the ingredients are well incorporated.

    Add the Egg and Buffalo Sauce: Pour in the beaten egg and buffalo sauce, mixing until everything is thoroughly combined. This will ensure the patties hold together and have that delicious buffalo flavor.

      Divide and Stuff: Divide the chicken mixture into 8 equal portions. Flatten each portion in the palm of your hand. Place a small portion (about 2 tablespoons) of chopped buffalo mozzarella in the center of the flattened chicken. Fold the edges over to encase the cheese and shape into a patty. Make sure the cheese is completely sealed inside.

        Heat the Oil: In a large skillet, heat about 2 tablespoons of olive oil over medium heat.

          Cook the Patties: Once the oil is hot, carefully place the stuffed chicken patties in the skillet. Cook for about 5-6 minutes on each side, or until the patties are golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

            Serve Hot: Remove the patties from the skillet and let them rest for a minute. Drizzle extra buffalo sauce on top and serve with a side of celery sticks and your favorite dipping sauce, like ranch or blue cheese.
