1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup pecans, toasted and roughly chopped

1/2 cup white chocolate chips (optional)

Sea salt for sprinkling

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream the Butter & Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

      Add Eggs & Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon until well combined.

          Mix Dry into Wet: Gradually add the dry mixture to the wet mixture, stirring just until the flour is incorporated. Do not overmix.

            Incorporate Pecans & Optional Chips: Gently fold in the toasted pecans and the white chocolate chips if using, ensuring they are evenly distributed throughout the dough.

              Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded scoops of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

                Sprinkle Sea Salt: Lightly sprinkle a pinch of sea salt on top of each cookie to enhance the flavor.

                  Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers might look slightly underbaked but will firm up as they cool.
