Cabbage and Smoked Sausage Recipe

1 medium head of green cabbage, chopped

1 lb smoked sausage (kielbasa or andouille), sliced into rounds

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon caraway seeds (optional)

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and black pepper to taste

1/2 cup chicken broth (or vegetable broth)

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced smoked sausage to the skillet and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the diced onion and cook until it becomes translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Add Cabbage and Spices: Stir in the chopped cabbage, smoked paprika, caraway seeds, red pepper flakes, salt, and pepper. Mix well to coat the cabbage with the spices.

        Cook the Cabbage: Pour in the chicken broth and bring the mixture to a simmer. Cover the skillet and let it cook for about 10-12 minutes or until the cabbage is tender, stirring occasionally.

          Combine Ingredients: Once the cabbage is cooked, add the browned smoked sausage back to the skillet. Drizzle the apple cider vinegar over the dish and stir to combine. Allow everything to cook together for an additional 3-4 minutes to warm through and blend flavors.

            Garnish and Serve: Remove from heat and sprinkle with fresh parsley. Serve hot, pairing with crusty bread or over rice if desired.
