For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 tsp ground cinnamon

For the cheesecake filling:

16 oz cream cheese, softened

1 cup ricotta cheese

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ tsp almond extract

1 cup mini chocolate chips

Zest of 1 orange (optional)

For the topping:

¼ cup powdered sugar

1 tsp vanilla extract

½ cup mini chocolate chips

Chopped pistachios (for garnish)

Instructions
 

Preheat the Oven:

    Preheat your oven to 325°F (160°C) and line a 9x13-inch baking pan with parchment paper, allowing some overhang on the sides for easy removal.

      Make the Crust:

        In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon. Stir until the mixture is crumbly and wet. Press it evenly into the bottom of the prepared baking pan. Bake for 10 minutes until golden, then remove from the oven and set aside to cool.

          Prepare the Cheesecake Filling:

            In a large mixing bowl, beat the softened cream cheese and ricotta cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar, beating until well combined.

              Add Eggs and Flavors:

                Incorporate the eggs one at a time, mixing well after each addition. Then, add the vanilla and almond extracts, mixing until just combined. Fold in the mini chocolate chips and orange zest (if using) gently with a spatula.

                  Bake the Cheesecake:

                    Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly.

                      Cool the Bars:

                        Once done, allow the cheesecake to cool at room temperature for about 1 hour. Then, refrigerate for at least 4 hours or overnight for best result.

                          Prepare the Topping:

                            In a small bowl, mix together the powdered sugar, remaining vanilla extract, and a splash of milk (if needed) to achieve a drizzly consistency.

                              Slice and Serve:

                                Once chilled and set, remove the cheesecake bars from the pan using the parchment paper overhang. Cut into evenly sized bars. Drizzle the powdered sugar glaze over each bar and sprinkle with mini chocolate chips and chopped pistachios for an extra crunch.
