4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

8 ounces fresh mozzarella cheese, sliced

2 large tomatoes, sliced

1 cup fresh basil leaves

1/4 cup balsamic glaze (store-bought or homemade)

1 tablespoon fresh basil, chopped (for garnish)

Instructions
 

Prep the chicken: Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with a paper towel and season both sides generously with salt and black pepper.

    Sear the chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the skillet and sear for about 5-7 minutes on each side until they are golden brown.

      Layer the toppings: Once the chicken is seared, top each breast with slices of fresh tomato followed by slices of mozzarella cheese. Place the skillet in the preheated oven.

        Bake until cooked through: Bake the chicken in the oven for 20-25 minutes, or until the cheese is melted and bubbly, and the internal temperature of the chicken reaches 165°F (75°C).

          Add fresh basil: Remove the skillet from the oven and immediately top the chicken with fresh basil leaves. Drizzle generously with balsamic glaze.
