4 slices of sourdough bread

6 oz fresh mozzarella cheese, sliced

1 large ripe tomato, sliced

Fresh basil leaves (about 10-15 leaves)

2 tbsp pesto (store-bought or homemade)

4 tbsp unsalted butter, softened

Balsamic glaze (for drizzling)

Salt and pepper to taste

Instructions
 

Start by preheating a non-stick skillet or griddle over medium heat.

    Take two slices of sourdough bread and spread 1 tablespoon of softened butter on one side of each slice.

      On the unbuttered side of one slice, layer half of the fresh mozzarella slices.

        Add a layer of tomato slices on top of the mozzarella, followed by fresh basil leaves. Season with a pinch of salt and pepper.

          Spread 1 tablespoon of pesto on the unbuttered side of the second slice of bread and place it on top, pesto side down, to form a sandwich.

            Place the sandwich in the preheated skillet, buttered side down. Cook for 3-4 minutes until golden brown and crispy.

              Carefully flip the sandwich using a spatula. Cook the other side for another 3-4 minutes until golden brown and the cheese starts to melt.

                Once both sides are perfectly grilled, remove the sandwich from the skillet. Drizzle balsamic glaze on top, if desired.

                  Repeat the process for the second sandwich with the remaining ingredients.

                    Slice the sandwiches in half and serve warm.
