12 oz fusilli or rotini pasta

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, torn

1/4 cup red onion, thinly sliced

1/2 cup basil pesto (store-bought or homemade)

2 tbsp extra-virgin olive oil

1 tbsp balsamic glaze (for drizzling)

Salt and pepper to taste

Optional: 1/4 cup pine nuts, toasted for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions, usually around 8-10 minutes, until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Pesto (if homemade): In a food processor, combine 2 cups fresh basil leaves, 1/2 cup pine nuts, 1/2 cup Parmesan cheese, 2 garlic cloves, 1/2 cup olive oil, and a pinch of salt. Blend until smooth. Taste and adjust seasoning.

      Combine the Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, torn basil leaves, and red onion.

        Dress the Salad: Add the basil pesto and extra-virgin olive oil to the pasta and veggies. Toss gently to combine, ensuring everything is coated evenly. Season with salt and pepper to taste.

          Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. If using pine nuts, toast them lightly in a skillet over medium heat for about 5 minutes, shaking occasionally.
