Caramelized Onion and Goat Cheese Tart

1 sheet of puff pastry, thawed

3 large onions, thinly sliced (yellow or sweet)

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

6 oz goat cheese, crumbled

1/4 cup grated Parmesan cheese

1 large egg, beaten (for egg wash)

Fresh thyme sprigs, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Caramelize the Onions: In a large skillet over medium heat, add the olive oil and butter. Once the butter has melted, add the sliced onions. Season with salt and pepper. Cook slowly, stirring occasionally, for about 25-30 minutes, until the onions are golden brown and caramelized.

      Add Flavor: Stir in the balsamic vinegar and thyme. Cook for an additional 2-3 minutes until the vinegar has mostly evaporated. Remove from heat and let it cool slightly.

        Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry to fit a 9-inch tart pan. Place the pastry in the tart pan, pressing it into the edges. Trim off any excess pastry. Prick the bottom with a fork to prevent it from puffing up.

          Assemble the Tart: Spread the caramelized onion mixture evenly over the pastry. Sprinkle the crumbled goat cheese and grated Parmesan cheese on top.

            Egg Wash: Brush the edges of the pastry with the beaten egg to give it a beautiful golden color when baked.

              Bake the Tart: Place the tart in the preheated oven and bake for 25-30 minutes, or until the pastry is puffed and golden brown.
