6 large eggs

1 medium onion, sliced thinly

8 ounces cremini mushrooms, sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

½ cup shredded mozzarella cheese (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Caramelize Onions: In a large, oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion, stirring occasionally. Cook for about 10-15 minutes until they’re soft and golden. If the onions start to stick, add a splash of water.

      Cook Mushrooms: Add the sliced mushrooms and butter to the skillet with the caramelized onions. Sprinkle in the thyme, salt, and pepper. Sauté for another 7-10 minutes, until the mushrooms are golden and have released their moisture, absorbing the flavor of the onions.

        Prepare Egg Mixture: In a mixing bowl, whisk the eggs together. Season with salt and pepper. If using mozzarella cheese, fold it into the egg mixture.

          Combine and Cook: Pour the egg mixture evenly over the caramelized onions and mushrooms in the skillet. Cook over medium heat for about 5-7 minutes until the edges start to set, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.

            Bake the Frittata: Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the center is set and the top is slightly golden.

              Garnish and Serve: Remove the frittata from the oven, let it cool for a couple of minutes. Slice into wedges and garnish with fresh parsley before serving.
