Caramelized Onion Pasta with Chilli Oil

400g spaghetti

3 large onions, thinly sliced

4 tablespoons olive oil

2 teaspoons sugar

4 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1/2 cup grated Parmesan cheese (or a vegan alternative)

1 teaspoon red chili flakes (adjust for spice level)

Fresh basil leaves, for garnish

Zest of 1 lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

    Caramelize the Onions: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, until they start to soften (about 5-7 minutes).

      Add Sugar and Continue Cooking: Sprinkle the sugar over the onions. Lower the heat to medium-low and continue to cook, stirring occasionally, until the onions are deeply caramelized and golden brown, about 20-25 minutes. If the onions start to stick or burn, add a splash of water or a little more oil.

        Introduce Garlic and Seasonings: Once the onions are caramelized, push them to one side of the skillet. Add the remaining 2 tablespoons of olive oil and the minced garlic. Sauté the garlic for about 1 minute until fragrant, then stir everything together.

          Combine with Pasta: Add the drained spaghetti to the skillet. Toss well to coat the pasta with the onion and garlic mixture. If the pasta seems dry, gradually add the reserved pasta water until you reach your desired consistency.

            Add Cheese and Season: Stir in the grated Parmesan cheese, red chili flakes, black pepper, and lemon zest. Toss until everything is well combined. Adjust salt and pepper to taste.

              Prepare Chilli Oil: In a small bowl or saucepan, heat 2 tablespoons of olive oil over low heat. Add an extra pinch of red chili flakes and let it infuse for a minute or two (don't let it smoke).
