1.5 lbs pork loin, trimmed and cut into 1-inch thick medallions

1 cup fresh pineapple juice

3 tablespoons soy sauce

2 tablespoons brown sugar

2 tablespoons vegetable oil

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 teaspoon allspice

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional for heat)

1/4 teaspoon black pepper

Salt, to taste

2 cups fresh pineapple, diced (for grilling and garnish)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Pork: In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, vegetable oil, minced garlic, grated ginger, allspice, smoked paprika, cayenne pepper, black pepper, and salt. Stir until well mixed. Add the pork medallions to the marinade and coat well. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

    Prepare the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, let the coals heat until they are covered with white ash. For a gas grill, preheat for about 10-15 minutes.

      Grill the Pineapple: While the grill is heating, toss the diced pineapple with a little bit of oil and a pinch of salt and pepper. Once the grill is hot, place the pineapple on a grill pan or skewers, and grill for about 3-4 minutes on each side until grill marks appear and the pineapple is slightly caramelized. Remove and set aside.

        Grill the Pork Medallions: Remove the pork from the marinade and let any excess drip off. Place the pork medallions on the grill and cook for about 4-5 minutes on each side or until the internal temperature reaches 145°F (63°C).

          Serve: Once done, let the pork rest for about 5 minutes. Plate the grilled pork medallions with the caramelized pineapple on the side. Garnish with fresh chopped cilantro and serve with lime wedges for an extra zest.
