Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1/4 cup dried cranberries, chopped

1/4 cup mixed nuts (walnuts, almonds, pistachios), chopped

1/4 cup mini dark chocolate chips

1/4 tsp sea salt

1 tsp vanilla extract

Optional: 1/2 tsp crushed red pepper flakes for a spicy kick

Instructions
 

Combine Dry Ingredients: In a large mixing bowl, combine rolled oats, chopped dried cranberries, chopped nuts, mini dark chocolate chips, and sea salt. Mix well until all ingredients are evenly distributed.

    Prepare Wet Mixture: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy. If you’re using crushed red pepper flakes for a bit of heat, add them to the wet mixture at this stage.

      Mix Together: Pour the wet mixture into the bowl with the dry ingredients. Stir until the mixture is fully combined and sticky. If the mixture feels too dry, add a teaspoon more of almond butter or honey as needed.

        Form Bites: Using your hands, scoop about 1 tablespoon of the mixture and roll it into a ball. Place the rolled balls on a parchment-lined baking sheet. Repeat until all the mixture is used.

          Chill: Place the baking sheet in the refrigerator for about 30 minutes to allow the energy bites to firm up.

            Serve or Store: Once chilled, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to a week or frozen for longer storage.
