1 cup sharp cheddar cheese, shredded

6 large eggs

1/2 cup milk (whole or 2%)

1/2 cup diced bell pepper (red or green)

1/4 cup finely chopped onion

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon olive oil

Optional: chopped fresh parsley for garnish

    Sauté the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they soften. Add the broccoli florets and continue to sauté for another 2-3 minutes until the broccoli is vibrant green and just tender. Remove from heat and set aside.
