Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1/2 cup buttermilk

1 cup cooked chili (homemade or canned)

1/4 cup chopped fresh chives (optional for garnish)

1 tablespoon melted butter (for brushing)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Biscuit Dough: In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and onion powder until well combined.

Incorporate Butter: Using a pastry cutter or your fingers, work the cold, cubed butter into the dry ingredients until the mixture resembles coarse crumbs.

Add Cheese: Stir in the shredded cheddar cheese until evenly distributed throughout the mixture.

Mix in Buttermilk: Pour the buttermilk into the bowl and gently mix until just combined. Be careful not to overmix.

Form Biscuit Balls: On a lightly floured surface, turn out the biscuit dough and knead it gently a few times until smooth. Divide the dough into about 12 equal portions and roll each portion into a ball.

Layer with Chili: In a greased 9x5 inch loaf pan, place a layer of biscuit balls at the bottom. Spoon a little of the chili over the balls, then add another layer of biscuit balls on top. Repeat this process until all biscuit balls and chili are used, finishing with a top layer of biscuit balls.

Brush with Butter: Brush the top of the biscuits with melted butter to give it a beautiful golden color while baking.

Bake: Place the loaf pan into the oven and bake for about 18-20 minutes or until the top is golden brown and the biscuits are cooked through.

Garnish and Serve: Once baked, remove from the oven and let it cool slightly. If desired, sprinkle chopped chives over the top for added flavor and freshness. Serve warm, pulling apart the delicious cheesy chili biscuits, and enjoy!
