Ingredients
  

For the crust:

1 ½ cups chocolate cookie crumbs (such as Oreo)

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

24 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

4 large eggs

8 oz Godiva® chocolate, melted and slightly cooled

½ cup sour cream

¼ cup all-purpose flour

1 tbsp cocoa powder

For the ganache topping:

8 oz Godiva® chocolate, chopped

1 cup heavy cream

1 tbsp unsalted butter

For garnish (optional):

Whipped cream

Chocolate shavings

Fresh berries

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Make the Crust:

      - In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

          - Bake the crust for about 10 minutes, then remove it from the oven and let it cool completely.

            Prepare the Cheesecake Filling:

              - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

                - Gradually add in the sugar and mix until fully incorporated, then add the vanilla extract.

                  - Add the eggs, one at a time, mixing thoroughly after each addition.

                    - Pour in the melted and slightly cooled Godiva chocolate, mix until just combined.

                      - Add sour cream, flour, and cocoa powder, then mix until the batter is smooth.

                        Bake the Cheesecake:

                          - Pour the cheesecake filling over the cooled crust.

                            - Bake in the preheated oven for 55-60 minutes or until the edges are set and the center is slightly jiggly.

                              - Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

                                Chill the Cheesecake:

                                  - Remove the cheesecake from the oven and allow it to come to room temperature.

                                    - After it has cooled, cover and refrigerate for at least 4 hours, preferably overnight for the best texture.

                                      Prepare the Ganache Topping:

                                        - Heat heavy cream in a small saucepan over medium heat until just boiling.

                                          - Pour the hot cream over the chopped Godiva chocolate and let it sit for 2-3 minutes until melted.

                                            - Stir in the butter until the mixture is smooth and glossy.

                                              Assemble the Cheesecake:

                                                - Once the cheesecake is completely chilled, pour the ganache over the top, spreading it evenly.

                                                  - Decorate with whipped cream, chocolate shavings, and fresh berries if desired.

                                                    Serve:

                                                      - Carefully remove the cheesecake from the springform pan.

                                                        - Slice and serve chilled. Enjoy your indulgent dessert!
