Ingredients

8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

1/4 cup ranch dressing

4 slices of bacon, cooked and crumbled

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/2 cup panko breadcrumbs (optional, for topping)

Chopped fresh parsley, for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute, stirring continuously to form a roux.

Add Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue cooking, stirring occasionally, until the mixture thickens and bubbles, about 5-7 minutes.

Incorporate Cream Cheese and Cheeses: Reduce heat to low, then stir in the cream cheese until melted. Gradually add the sharp cheddar and mozzarella cheese, stirring until completely melted and smooth.

Flavor It Up: Mix in the ranch dressing, garlic powder, and onion powder, and season with salt and pepper to taste.

Combine with Pasta: Add the cooked macaroni to the cheese sauce and mix until well coated. Fold in the crumbled bacon, reserving a small amount for garnish.

Optional Baking Step: If you prefer a baked version, preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish. If using, sprinkle the panko breadcrumbs on top for added crunch. Bake for 20-25 minutes or until bubbly and golden on top.

Serve: Once done, remove from the oven and let it cool slightly. Garnish with the remaining bacon and fresh parsley before serving.
