1 lb ground beef

1 cup uncooked long-grain rice

1 medium onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juice)

1 cup beef broth

1 cup frozen mixed vegetables (peas, carrots, corn)

2 cups shredded cheddar cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Optional: Fresh parsley for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute. Then, add the ground beef, season with salt, pepper, and Italian seasoning. Cook until the beef is thoroughly browned and crumbled, about 5-7 minutes. Drain excess fat if necessary.

      Combine Ingredients: Stir in the uncooked rice, diced tomatoes (with their juice), and beef broth into the skillet with the beef mixture. Add the frozen mixed vegetables and mix everything well.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

          Add Cheese: Sprinkle 1 cup of shredded cheddar cheese on top of the mixture, ensuring it covers the surface evenly.

            Cover and Bake: Cover the casserole dish with aluminum foil (this helps it cook evenly) and bake in the preheated oven for 30 minutes.

              Add More Cheese: After 30 minutes, remove the foil, stir the casserole gently, and sprinkle the remaining 1 cup of cheddar cheese on top. Return to the oven uncovered and bake for an additional 15 minutes until the cheese is melted and bubbly, and the rice is tender.
