1 lb ground beef

1 cup long-grain white rice

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, chopped (any color)

2 cups beef broth

1 cup shredded cheddar cheese

1 can (14.5 oz) diced tomatoes (with juice)

1 tsp chili powder

1/2 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Green onions, sliced (for garnish)

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and chopped bell pepper. Sauté for about 3-4 minutes until the onions are translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break it apart with a spatula and cook until no longer pink, about 5-7 minutes. Drain excess grease if necessary.

      Add Seasonings: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Cook for another minute to allow the spices to bloom.

        Combine Ingredients: Add the uncooked rice, diced tomatoes (with juice), and beef broth to the skillet. Stir everything together until well combined.

          Simmer: Bring the mixture to a gentle boil. Once boiling, lower the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.
