4 medium-sized potatoes, peeled and thinly sliced

2 cups cooked chicken, diced (rotisserie or boiled)

2 cups fresh broccoli florets

2 cups shredded cheddar cheese

1 cup milk

1 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (optional for extra flavor)

¼ cup breadcrumbs (optional, for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.

    Prepare the Broccoli: In a pot, bring water to a boil and blanch the broccoli florets for about 2-3 minutes until bright green and slightly tender. Drain and set aside.

      Make the Cheese Sauce: In a mixing bowl, combine the milk, sour cream, garlic powder, onion powder, salt, black pepper, and paprika. Whisk until well blended.

        Layer the Bake:

          - Start with a layer of potato slices at the bottom of the prepared baking dish, slightly overlapping them.

            - Add half of the diced chicken evenly over the potatoes, followed by half of the blanched broccoli.

              - Pour over a third of the cheese sauce, then sprinkle with a handful of cheddar cheese.

                - Repeat the layers with the remaining potatoes, chicken, broccoli, and cheese sauce.

                  - Finish by topping the final layer with the remaining cheddar cheese and sprinkle breadcrumbs over the top if using.

                    Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the top is golden and bubbly.

                      Serve: Once done, remove from the oven and let it rest for about 5-10 minutes before serving. Garnish with fresh parsley for a pop of color.
