2 cups uncooked white or brown rice

4 cups broccoli florets (fresh or frozen)

1 medium onion, diced

3 cloves garlic, minced

3 tablespoons olive oil

1 cup vegetable or chicken broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese (divided)

1 cup grated Parmesan cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Rice: Cook the rice according to the package instructions. If you're using brown rice, it will take longer than white rice. Set aside once cooked.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Incorporate Broccoli: Add the broccoli florets into the skillet and sauté for another 5 minutes, or until they are bright green and slightly tender.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed broccoli and onion mixture, vegetable or chicken broth, heavy cream, 1 1/2 cups cheddar cheese, Parmesan cheese, salt, black pepper, paprika, garlic powder, and onion powder. Mix well until everything is thoroughly combined.

          Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or oil. Pour the broccoli and rice mixture into the baking dish and spread it evenly.

            Add Cheese and Breadcrumbs: Sprinkle the remaining 1/2 cup of cheddar cheese on top of the casserole. If desired, add breadcrumbs evenly over the cheese for a crunchy topping.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Once done, remove the casserole from the oven and let it cool for about 5-10 minutes. Garnish with freshly chopped parsley and serve warm.
