Cheesy Broccoli Rice Casserole

Ingredients
  

2 cups of cooked white or brown rice

2 cups of fresh broccoli florets (or 1 cup frozen, thawed)

2 cups of shredded sharp cheddar cheese

1 cup of cream of mushroom soup (or homemade)

1/2 cup of milk

1/2 teaspoon of garlic powder

1/2 teaspoon of onion powder

Salt and pepper to taste

1/2 cup of breadcrumbs (for topping)

2 tablespoons of olive oil or melted butter

Optional: 1/2 teaspoon of paprika for added flavor

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the cooked rice, broccoli florets, 1 ½ cups of shredded cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Stir until well combined and the broccoli is evenly distributed.

      Transfer the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

        In a small bowl, mix the breadcrumbs with olive oil or melted butter and optional paprika until the crumbs are coated. Sprinkle the breadcrumb mixture evenly over the rice casserole.

          Top with the remaining ½ cup of shredded cheddar cheese over the breadcrumbs for an extra cheesy and crispy topping.

            Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and the top is golden brown.

              Remove from the oven and let it cool for about 5 minutes before serving.
