Cheesy Cauliflower and Chicken Bake

1 medium head of cauliflower, cut into florets

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup cream of chicken soup (or homemade)

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 teaspoon salt

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (optional, for topping)

Fresh parsley or chives, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Cauliflower: In a large pot of salted boiling water, blanch the cauliflower florets for 3-4 minutes until slightly tender but still crisp. Drain and set aside.

      Mix Ingredients: In a large mixing bowl, combine the shredded chicken, blanched cauliflower, half of the cheddar cheese, half of the mozzarella cheese, cream of chicken soup, milk, garlic powder, onion powder, black pepper, and salt. Stir until well mixed.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

          Add Cheese: Top the mixture with the remaining cheddar and mozzarella cheese, followed by a sprinkle of grated Parmesan for additional flavor.

            Breadcrumb Topping (Optional): If you like a crunchy topping, sprinkle the breadcrumbs over the cheese layer.
