1 medium head of cauliflower, cut into florets

1 medium head of broccoli, cut into florets

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup heavy cream

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (if using breadcrumbs)

Instructions
 

Preheat the oven: Start by preheating your oven to 375°F (190°C).

    Blanch the vegetables: In a large pot of salted boiling water, add the cauliflower and broccoli florets. Blanch for about 3-4 minutes until slightly tender but still crisp. Drain and set aside in a large mixing bowl.

      Make the cheese sauce: In a saucepan over medium heat, combine the heavy cream, minced garlic, onion powder, garlic powder, smoked paprika, salt, and pepper. Stir until well combined and heated through, but do not let it boil. Reduce the heat and add half of the cheddar, half of the mozzarella, and all of the Parmesan cheese. Stir until melted and smooth.

        Combine the vegetables and cheese sauce: Pour the cheese sauce over the blanched cauliflower and broccoli in the mixing bowl. Add the remaining cheddar and mozzarella, stirring gently to coat the vegetables evenly in the sauce.

          Prepare for baking: Grease a 9x13 inch baking dish with a bit of olive oil. Transfer the cheesy vegetable mixture into the dish, spreading it out evenly.
