Cheesy Chicken and Broccoli Skillet Dinner

1 pound boneless, skinless chicken breasts, diced

2 cups broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup chicken broth (low sodium)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup cooked rice or quinoa (optional for serving)

Fresh parsley for garnish (optional)

Instructions
 

Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, garlic powder, onion powder, and paprika. Cook for about 5-7 minutes or until the chicken is browned and fully cooked. Remove the chicken from the skillet and set aside.

    Cook Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent. Then, add the broccoli florets and continue to cook for an additional 3-4 minutes, stirring occasionally.

      Combine Ingredients: Pour the chicken broth into the skillet along with the cooked chicken. Bring to a simmer and cover for about 5 minutes, allowing the broccoli to steam and become tender.

        Add Cheese: Reduce the heat to low, and stir in the shredded cheddar cheese and grated Parmesan cheese. Mix well until the cheese is melted and coats the chicken and broccoli.

          Serve: If using, spoon some cooked rice or quinoa onto plates and top with the cheesy chicken and broccoli mixture. Garnish with fresh parsley if desired.
