4 large eggs

1 cup cheddar cheese, shredded

1/2 cup cooked chili (canned or homemade)

4 slices of sourdough bread

1/4 cup cream cheese, softened

2 tablespoons butter

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, garlic powder, onion powder, salt, and pepper until well combined.

    Cook the Eggs: In a non-stick skillet over medium heat, melt 1 tablespoon of butter. Pour in the egg mixture and cook, stirring gently, until the eggs are just set but still soft (about 3-4 minutes). Remove from heat and stir in 1/2 cup of shredded cheddar cheese until melted.

      Toast the Bread: In another skillet, melt the remaining butter over medium heat. Add the slices of sourdough bread and toast until golden brown on one side (about 2-3 minutes). Flip the bread and spread a layer of cream cheese on the toasted side.

        Assemble the Sandwiches: On the cream cheese side of each slice of bread, layer a generous spoonful of chili, followed by a portion of the cheesy egg mixture. Top each with a little extra cheddar cheese.

          Melt the Cheese: Place the assembled sandwiches back in the skillet (chili and egg side up) and cover with a lid.
