Cheesy Fall Breakfast Potato Bake

4 large russet potatoes, diced into 1-inch cubes

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 cup cooked and crumbled breakfast sausage (or vegetarian sausage)

1 medium onion, finely chopped

1 red bell pepper, diced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large eggs

1/2 cup milk

1 teaspoon dried thyme

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: In a large bowl, toss the diced potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread the potatoes in a single layer on a baking sheet.

      Roast Potatoes: Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and fork-tender, tossing halfway through cooking time to ensure even browning.

        Sauté Vegetables: While the potatoes are roasting, heat a skillet over medium heat. Add chopped onion and bell pepper, and sauté until they are softened, about 5-7 minutes. Add the crumbled sausage and cook for an additional 3-4 minutes.

          Combine Ingredients: In a large mixing bowl, combine the roasted potatoes, sautéed vegetables and sausage mixture, cheddar cheese, mozzarella cheese, dried thyme, salt, and pepper. Mix well to combine all ingredients.

            Prepare Egg Mixture: In a separate bowl, whisk together the eggs and milk until well combined. Pour the egg mixture over the potato mixture and gently stir to combine.

              Bake: Transfer the combined mixture into a greased 9x13-inch baking dish. Spread evenly and bake in the oven at 400°F (200°C) for 25-30 minutes, or until the eggs are set and the top is bubbly and slightly golden.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh chopped parsley before serving. Enjoy this hearty, cheesy breakfast bake warm!
